Instructions:

  1. Cook the Chicken:
Season the chicken thighs with salt and pepper. Heat some oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes per side until fully cooked. Remove the chicken from the skillet, let it rest for a few minutes, and then slice it into thin strips.
  2. Prepare the Vegetables:
While the chicken is resting, prepare the vegetables. Julienne the carrots, slice the bell pepper, and cut the broccoli into bite-sized florets.
  3. Make the Teriyaki Sauce:
In a small saucepan, combine soy sauce, honey, rice vinegar, grated ginger, minced garlic, cornstarch, and water. Cook over medium heat, stirring constantly until the sauce thickens, about 3-4 minutes.
  4. Sauté the Vegetables:
In the same skillet used to cook the chicken, add a little more oil if needed. Sauté the carrots, bell pepper, and broccoli for 3-4 minutes until tender-crisp.
  5. Combine Noodles and Sauce:
Add the cooked and drained udon noodles to the skillet with the vegetables. Pour the teriyaki sauce over the noodles and vegetables, stirring everything together. Cook for an additional 2-3 minutes until everything is heated through.
  6. Assemble the Bento Boxes:
Divide the chicken teriyaki noodles and vegetables into 4 bento boxes. Top with sliced green onions and sesame seeds, if desired.
